Her Salsa Ain't Bad Either


The first time I had this salsa, I was in junior high school and a friend of our family was getting married. There were hundreds of people at the wedding, and tubs and tubs full of salsa to delight the masses. My mom learned to make the salsa soon thereafter, and it has been a staple in our family ever since. The first time I took George to meet my parents, we had this salsa. George raved about it all the way home, so of course I took to making it on a regular basis.

I thought about posting this salsa recipe over the summer, when I was making it at least once a week, but I was ashamed to post a recipe using canned tomatoes when the real things were growing in back yards across America. But now that fresh tomatoes are no longer available in most gardens (except for lucky Madeline), I no longer feel guilty opening up a can or two of Mexican style stewed tomatoes, especially when they produce such a strong Pavlovian response around here. "Are you making salsa?" George asks excitedly. Yes, I am, and so can you.

Salsa Recipe
1/2 onion, chopped
2-4 cloves of garlic
1/2 jalapeno pepper, seeded
1 bunch fresh cilantro
2 cans Mexican style stewed tomatoes
1/2 teaspoon cumin
salt and pepper to taste

Process above ingredients in blender to desired salsa consistency. Store in refrigerator (better made one day ahead, or at least a few hours).

    by the way... we love love love salsa and I make it alot during " tomato season"...but now that winter is here I am going to try yours as it looks sooo yummy!
    What size cans of stewed to matoes...?

  5. mmmm. this was so good. had to come get the recipe right now! i decided may is going to be a mostly raw month...i am hoping for at least about 90%....this salsa will come in handy dandy for dipping cucumber slices in! i also went and bought some mangos yesterday :) hope your recouping!
