Pumpkin Spice Bagel Recipe

Pumpkin Spice Bagels (Makes 8)

1/2 cup plus 2 Tablespoons water
3 cups flour (I use 1 cup whole wheat flour and 2 cups unbleached flour)
4 T brown sugar
2 T pumpkin butter
3/4 cup pumpkin puree
1 teaspoon salt
2 teaspoons pumpkin spice
1 teaspoon cinnamon
3 1/2 teaspoons yeast

Place ingredients in bread machine and run on dough cycle. Divide dough into 8 equal balls, shape into bagel. While bagels rise, bring a pot of water with 1 tablespoon sugar to a rapid boil. Working in small batches (2-3 bagels at a time), boil bagels 30 seconds on each side. With a slotted spoon, transfer bagels to a baking sheet covered in cornmeal. *Use a baking stone or pizza stone if you have one - my bagels kept sticking to the metal baking sheet*

Bake at 400 degrees for approximately 15 minutes.

We just can't get enough of these bagels. George and I eat them with cream cheese and pumpkin butter, while the kids prefer theirs smothered in Nutella (they'll eat anything smothered in Nutella).

This is the perfect time of year to bake bread, such a natural way to warm up the house, the belly and the soul. The act of making bread really stimulates all the senses.

  2. When Jeff sees this there will be no end to the bageling, I am sure. Heather just turned us on to Molly's bread blog last week and we are loving it. But it all diseappears too fast to photograph. How do three thin people eat two loaves of bread in two hours? Oh well. Yeast ho!

  3. Mmmm. I'd love to make my own bagels. We spend a fortune on the really good ones from a local bakery, but homemade sounds so fun! Unfortunately, I don't have a bread machine though. Maybe I can get my husband to knead some dough. He loves that stuff.

And I've had bagels on the brain, especially since a trip back to NYC last week -- thinking it's nigh on time I learned to make my own. And then I read this! Completely inspiring.   17. anna - if you don't have pumpkin butter on hand, use 2 tablespoons more of brown sugar or honey. the pumpkin butter lends both sweetness and extra spice.

  22. Yum! Are you willing to trade a jar of pumpkin apple butter I made for a couple of the birds you make? I've been dying to make a couple in cute fabrics but haven't had the time. I can drop off a pint jar any time you're ready!!! Hopefully the stuff I made does the trick for your bagels. It was my first attempt and tasted good on my toast this morning. Let me know! Patty T
